RECIPE: Vegan Desserts

Recipes: Vegan Desserts To Satisfy Your Sweet Tooth

Author: Alisha (Store Manager, Oakville)

If you're like me, you often find yourself craving something sweet at the end of a meal before you can feel fully satisfied. To put a stop to feeling guilty after indulging in something sugary, I started experimenting with baking vegan desserts, so I can still get that dessert fix, but in a healthier way. So my sister, Anthea, and I set out and tried many vegan recipes and are still constantly on the look out for healthier options, but think we have narrowed down two of our favourite recipes that we know you will love! And with a little tweaking, we've perfected them to our liking and think people will be shocked to know they are really quite healthy and also vegan friendly. I hope you like them as much as we do!

Black Bean Brownies

What you'll need:

  • 1 1/2 cups black beans (drained and rinsed)
  • 2 tbsp cocoa powder
  • 1/2 cups quick oats
  • 1/4 tsp sea salt
  • 1/3 cups honey (can sub maple syrup or agave)
  • 1/4 cups coconut oil, melted
  • 2 tsp pure vanilla extract
  • 1/2 baking powder
  • 1/2 - 2/3 cup dark chocolate chips (omit at your own risk)

Preheat oven to 350F and combine all ingredients except the chocolate chips in a food processor. Blend until smooth. By hand, stir in chocolate chips and spoon the mixture into a greased 8 x 8 pan or muffin tins. Cook for 15-18 minutes and let cool for 10 minutes before enjoying.

Banana Muffins

*Makes 10-12 muffins

What you'll need:

  • 2 flax egg (2 tbsp ground flax mixed with 5 tbsp water and let sit for 5 minutes)
  • 4 ripe bananas
  • 1/3 cup apple sauce
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 1 tsp pure vanilla extract
  • 2 tsp baking soda
  • 1/2 tsp sea salt
  • 2 tbsp hemp hearts
  • 2 tbsp chai seeds
  • 1 tbsp ground cinnamon
  • 1 1/2 cups rolled oats
  • 1/2 cup whole wheat flour (chickpea or other vegan flour)
  • 1/4 cup chopped walnuts (optional)

Preheat oven to 375F and lightly grease a muffin tin. Make flax egg in a large mixing bowl, let sit for 5 minutes, and then add banana and apple sauce and mash. Add honey, coconut oil, vanilla, baking soda and whisk for one minute. Stir in the rest of the ingredients and bake for 20 - 25 minutes (or until golden brown and a toothpick comes out clean). Let cool for a few minutes before removing from muffin tins. Enjoy!
